INGREDIENTS

  • Salsify stalks
  • Lemon or lime juice
  • Butter

HOW TO DO IT

Peel the salsify stalks carefully and cut into inch-long chunks.

Place in cold water to which you add lemon or lime juice to prevent the vegetable discolouring.

Boil in salted water for around 25 minutes until tender. Serve immediately with salt and pepper and a good chunk of fresh butter.
