INGREDIENTS (4 persons)

  • 1 fine fillet of cod weighing approximately 2lb
  • 3 ozs soft white breadcrumbs
  • 3 minced garlic cloves
  • 6 tbsps of finely chopped coriander
  • 2-3 ozs of melted butter
  • The grated zest of a lemon

HOW TO DO IT

Combine the breadcrumbs, garlic, coriander, melted butter and grated zest to make the crust.

Preheat oven to 220C. Season the cod with salt and pepper, pat the crust ingredients in place, put on a baking sheet and cook for about 25 mins, checking after 20 that the crust is nicely browned and the fish just cooked.

It is important to caress your fish to find and remove the pinbones which lurk and will sabotage every mouthful. Invest in an inexpensive pair of kitchen tweezers for this or use your wife’s eyebrow pluckers, bring certain to wash them before returning them.
