INGREDIENTS

  • 2 kilos of shoulder of pork
  • 8 plums
  • 4 potatoes
  • 1 red onion
  • 4 cloves of garlic

HOW TO DO IT

Place the pork on a roasting tray with lots of salt and pepper. Pre heat the oven.

Pop in the meat and leave to cook on a low heat for 4/5 hours.

Peel and chop potatoes into 2 inch cubes, boil for 8/10 minutes.

Cut the onions in small pieces along with the garlic.

After 4 hours pour off a small amount of the pork fat from the shoulder into a frying pan, drain and fry the potatoes along with chopped onions and garlic. 15 minutes cooking over a high flame and the spuds will be nice and browned.

Take the pork from the oven and let it rest for 20 minutes – while that happens place the plums in the oven till they become soft.

Cook fresh greens to go with the roast pork. Spicy apple chutney goes well with it also.
