INGREDIENTS

  • 500g of lamb mince, a bit fatty is good
  • 1 large onion diced finely
  • 1 tsp turmeric
  • ½ tsp ground cinnamon
  • 2 tsp ground cumin
  • 2 tbsp sea salt
  • 50 g pine nuts, lightly roasted
  • Large handful of currants
  • 40g of flat leave parsley chopped
  • 2 large eggs
  • Olive oil

HOW TO DO IT

Put all the ingredients in a large mixing bowl. Get your hands in the meat mix and really work it all together, pummel it all together for a good few minutes. Make used the egg and spices are all mixed in well.

Take a small handful of the mixture and mould into a 2 inches long elongated sausage.

Heat the oil in a flat pre heated pan. Fry four of the patties over a medium heat until one side in nicely browned, flip them over and do the same the other side. Cook the remaining koftas.

Place in a oven proof dish and keep warm in a pre-heated oven.

Serve with warm flat bread.
